Privacy policy.
This policy is written in plain language because we'd rather you read it than skim it. The legalese version is the same content, in lawyer language, and we'll publish it before our first paid order ships.
Who we are
PNC Bread (Panem Nostrum Cotidianum) is a small bakery operating from the European Union. We are the data controller for the personal data described below.

What data we collect, and why
Just enough to send you bread.
- Email and first name — so we can confirm your pre-order, send you a welcome note, and tell you when the loaf ships. Lawful basis: contract performance.
- Shipping country, quantity preference — so we can quote shipping accurately and reserve enough mix.
- Postal address and payment information — collected only at the moment you place a paid order, by our payment processor (Stripe). We never see or store your card number.
- Optional: anonymous analytics — only if you accept the cookie banner. If you click "Essential only", we collect no analytics at all.
What we don't do
- We do not sell your data.
- We do not share your data with advertisers.
- We do not run third-party trackers (Meta Pixel, TikTok, Google Ads) in this site.
- We do not enrich your data with external sources.
Who else sees your data
Three companies, each only the data they strictly need:
- Email service (Postmark or similar) — sees your email and the contents of the message we send you.
- Courier (DHL / DPD / Hermes depending on country) — sees your name and address.
- Payment processor (Stripe) — sees what you paid and your card data, which we never see.
How long we keep it
- Pre-order intent (email + name only): up to 12 months.
- Active subscriptions: as long as you are subscribed, plus 36 months for tax records.
- Anonymous analytics (if accepted): 13 months.
Your rights under the GDPR
You can ask us to:
- send you everything we have on you (right of access);
- correct anything that's wrong (rectification);
- delete it all (right to erasure);
- stop processing it (restriction);
- export it in a portable format (data portability);
- object to processing.
Email privacy@pnc-bread.eu. We answer within 30 days, usually within a week. If we don't, you can complain to your national data protection authority.

Changes
If we change anything material we'll bump the version number above and email everyone affected before the change takes effect.
The short version. We collect your name, email and shipping address. We use it to send you bread. We don't sell it. You can ask us to delete everything any time at privacy@pnc-bread.eu.
