At the YCFCU cooperative, cherries are pulped within hours of picking, fermented 36–48 hours in clean water, and dried on raised beds for 10–15 days in direct Yirgacheffe sun. Roasted light in the Alps — first crack at 196°C, stopped there — rested 48 hours, ground for immersion, sealed in nitrogen-flushed kraft. The jasmine and bergamot notes are not added. They are grown. We name every step. Anyone who doesn't is hiding something.
